Avocado and Tomato Salad


  • 1 medium sized Avocado (Diced)
  • ½ cup Chopped Chive
  • ¼ cup Thinly Sliced Shallots or Red Onions
  • 1 cup Diced Tomatoes
  • 1 tbsp Lime Juice
  • Salt to Taste 
  • Pepper to Taste
  • EVOO
  • Method
  • In a large bowl mix avocadoes, tomatoes, chive, shallots, lime juice, and EVOO. Season to taste with salt and pepper. And place to chill in a refrigerator.



Grapefruit Citronette


  • 1 cup Ruby Grapefruit Juice
  • 1 tsp Dijon Mustard
  • 2 tsp Minced Shallots
  • 1 cup Pomace Olive Oil 




Bring to a boil grapefruit juice and shallots, and then lower the heat to a simmer until juice has reduced by half. Set aside to cool. In a boil whisk together grapefruit reduction and mustard until they are properly incorporated, then slowly pour olive oil while stirring the grapefruit mustard mixture until all oil is added.
