Pan Roasted Shrimp



  • 9 ea. 13 – 15 Shrimp (peeled)
  • 1½tsp Garlic Puree
  • 2 ea. Lime zest
  • 2 tsp Chopped Thyme
  • 1 tsp Chopped Dill
  • 1 tsp Chopped Cilantro
  • 1 tsp Chopped Parsley
  • 1 tsp Hot Smoked Paprika
  • Salt to taste
  • Pepper to taste
  • ¼ cup White Wine
  • 1 ½ tbsp Pomace Olive Oil




In a bowl mix together, Shrimp, garlic, zest, thyme, dill, cilantro, parsley, smoked paprika. Set aside for 10 ten minutes of marinating time. Heat a medium skillet on the stove top to a moderately high temperature, add oil and fully coat the pan. When the oil begins to smoke, place already marinated shrimp in the pan to sit on one level, leave to sear until golden brown in color. Then flip each shrimp to do the same on the other side. Add white wine after two minutes, and allow wine to reduce, when wine is almost totally reduced add grapefruit citronette and remove from heat.
